chilli, chile and chili What's the difference? Well...
  • chile - is the hot fruit of the capsicum plant
  • chili  - is a stew made from meat and chiles
  • chilli - is the British spelling of chile
hotlink Brit-Mex - British versions of Mexican and southwestern USA recipes created by your very own David Smith. Tex-Mex was never like this!
hotlink Muoi Khuntilanont's Kitchen (reconstructed) - the late Colonel Ian Khuntilanont-Philpott put together a wonderful site featuring his wife's authentic Thai recipes. Unfortunately, the site was taken down long ago but all is not lost. Chile-Head Chet Bacon collected together as many recipes as he could find from the far corners of the Net and catalogued them all on his site. See also my Thai Curries section.
hotlink UK ChileHead - Graeme Caselton, apart from being a Mystic Fire Priest of the Transcendental Capsaicinophilic Society(!), has over 400 recipes for chili. This is a growing site which now has a chile FAQ, a database of all the different capsicum varieties and information on sources of chile seeds and dried chiles.
hotlink Hot Headz - The UK's largest stockist of specialist, authentic chilli sauces, salsas, mustards and marinades (and a nice bunch of people to boot).

hotlink History and Legends of Chili - Linda Stradley's culinary history of the famous dish. Did you know that Kit Carson's last words were said to be "wish I had time for just one more bowl of chili"?
hotlink = Mark's Place - featuring lots of fun out-takes from the Chile-Heads mailing list and the world famous YKYACHI (You Know You're A Chile-Head If...) compendium.
hotlink Garry's Chili Pot - Garry Howard's homage to chili. Be sure to read the essay by John Thorne, editor of Simple Cooking, entitled "Just Another Bowl of Texas Red". I greatly admire John's food writing and if you want to enjoy more try visiting his own Simple Cooking site.
hotlink Bad Attitude Chili - the most (in)famous chili recipe from the Chile-Heads list. If you're after an authentic Texan chili recipe try this first.
hotlink The Mole Page - a venerable site dedicated to the Mexican dish of mole (pronounced moh-lay). Surprisingly curry-like in its preparation mole contains, amongst other things, ground nuts and chocolate. Yes, chocolate!
