Despite the name, this famous restaurant dish has no real connection with Bombay. No, Bombay aloo is another one of those Indian restaurant inventions. If you were going to bring the name up to date it should really be called "Mumbai aloo" but it doesn't quite have the same ring to it does it? So Bombay aloo it is then.
